Couples Late Night Baking

Shaun noticed a pretty cake on a website-- a Chocolate Truffle Raspberry one. We made it tonight after we put Enoch to bed.

 Did you notice all the butter for this recipe?
Here Shaun has mixed together coco powder and boiling water. That's sour cream in the 3/4 cup that he's about to add. It's part of the cake batter.
We had to thaw some frozen raspberries and collect the juices.... that would all become the raspberry filling.
We had to take out some for the frosting's puree --used later.
Running low on sugar....
 Chopping chocolate for Ganache....
 Shaun adding the raspberries to the filling mixture...

 Making the Ganache.... chopped chocolate with warm cream on top.....start to mix....
 and it gets creamier....
 ...and then add some butter for shine...and refrigerate to set.
 Shaun starting on the buttercream frosting...with egg whites and sugar on the stove in a double boiler set up... (kills the bacteria in eggs when you heat them to 160 F.

 Transfer to mixer and attempt to get stiff egg white peaks...
 Raspberry puree for frosting....
 Cakes are done-- three 9 inch rounds.
 Add 21 tbspn butter to frosting....but try not to think about it. (Its a big cake...)
 Chop MORE chocolate in prepartation for chocolate drizzle at end...
 Frosting is whipped....and done.
 While waiting for our cakes to cool, we found out that our counter-top is NOT flat...please note the 1/4 cup of light cornsyrup in background is leaning to the right. Shaun got out his Level -app for his phone...and proved his theory.
 Putting together the cake. Ganache- with a piping of it around the edge--then fill in with raspberry filling. Layer again...
 Frost....with knife...not bumpy spatula....or else it ruins your work!!! Then refrigerate for 30 minutes.
Then drizzle with chocolate again, add a little ganache decoration on top (mine looked like chocolate turds.) Then refrigerate again...and eat. 

It was very moist...very rich...light cake...strong dark chocolate flavor. Take tiny bites. I was really glad Shaun and I made it together. It was a labor intensive cake, but really fun to do together! If you want some, call Shaun--he's home this week---and we have TOO MUCH!!

Oh. My. Goodness. There's NO WAY I would've invested all that time into a cake! But I have to admit, if it tasted as fabulous as it looked, maybe it would be worth it. :) Plus, doing it as a couple would be more fun.

P.S. I miss you.
